Because while a fly rod is used, it's not the same fly fishing to me. It's salt water fly fishing. About as similar as spin fishing and fly fishing for trout.
While I am interested as hell in it, it strikes me as a totally different breed of angling, and basically requires tons of new research, gear, and tactics. Too much work for me up to this point. Hopefully next year!

I agree, it's too much work and the chances of landing bigger ones like that are slim. I don't care who you are. Take a plugin rod and enjoy yourself. You'll get in 50x more casts and catch WAY more fish.
As far as taking advantage of the salt, Jersey is marginal. If you really want to get into consistent fishing you need to head north where the fish stay. In Jersey they just pass through for the most part. It's great if your a local and can be there. Otherwise your just hoping the stripers will be there when you take your trip.

That's like 2 hours from Atlantic City.

Anyway, here's a photo of fly tying innovator and Jersey shore legend Bob Popovics with a recently caught cow that weighed over thirty pounds - and yes, obviously caught from the beach. For many of us, this would be the fly caught bass of a lifetime. Maybe not for Bob, but I'm sure he's right proud of it.

I have caught up to 38 lb. but that 40 is still eluding me.

I spent literally 3 years living in my van to get those fish, 4-5 days out of the week starting in april till late dec. worked hard for them too.

Hey, we're talking fly rod fish from the beach
Nevertheless....a "trophy" is obviously relative. I'm happy with any striper I can catch from the beach regardless of tackle but would consider a fly rod 30lber a fish of a lifetime and doubt I'll ever get one that large. I've caught hundreds of fly rod stripers from the surf and none were even close to #30.
Boat fishing? Whole different story. It's really not that hard, with a good guide, under the right conditions....to catch a 30lb bass at a place like the CBBT or Outer Banks on a fly and even easier still using eels or live lining bunker.
A 30lber from terra firma with the long rod....Pretty extraordinary in my opinion.
