I own about 300 yards of riverfront on the upper mainstem of the Delaware - and the riverbank is covered with knotweed. I've read alot about eradication, and may try it some day (though it will be difficult where I am because neighboring riverbanks on either side are filled with the stuff, also. In the meantime, I've also read about the edible properties of the weed. This spring decided to give it a try, and prepared some according to an internet recipe that sounded good (for a knotweed bread). Essentially, you boil and create a puree of it - then use that in recipes. It was a bunch of work to prep, and in the end it didn't really add much to what I was doing. won't go there again, probably.
