Brookies look like that, not browns in my experience
One time, years ago, we kept some wild browns out of a famous central PA limestoner. Later that night, as we were camped on the banks and after having consumed copious amounts of beer, we gutted them, scraped the blood line, de-headed them, wrapped them in foil, and threw them in the fire. They were freaking delicious! The meat was very pink and very salmon like on those wild browns!

i think the blood line your talking about is the kidneys. over an open fire, i cook mine the same way.
 
Many Many years ago before I was all in on C&R.
I brought to the pan 3 or 4 trout hooked in NC PA.
Upon gutting and cleaning them I noticed the filet/meat had an orangy color as opposed to the white flesh of the others. i realize now that this was proabaly a Native Brookie! And it was AWESOME tasting!
BTW that fish was legal size because I did know that!
 
Many a fresh stocker belly up after Mentored Youth Day on my local crick. Folks catch and release more, but not well....

I said I don't keep any, but I have kept a stocker or two when I am with my buddy who has a smoker, just so he has 5 good ones to drag home.
