One of my favorite coffee table style books is Trout and Salmon of North America by Robert Behnke. This is an enjoyable read for anyone who loves trout or would otherwise like to learn more about these fish we love. There is tons of fascinating information about the habitat, range, and habits of our salmonids. Rare species of fish, esp Western cutthroats, Gila trout etc, are well covered. Dr Behnke's research is well documented and he's widely regarded as the nation's leading authority on salmonids. This isn't a fishing book but rather a "fish study" type reference book that happens to be very engaging to read. Joe Tomelleri's illustrations are second to none and make the book all the better.
