I fish for trout only in the summer. I try to catch as many as possible in the hottest and driest weather we receive. I release most so they don't count towards my daily limit and then I'll keep a few at the end of the day, always wild of course. I fight each one for at least 5 minutes, handle them with dry hands, and often just grab the hook and shake the fish around until the hook pops loose.
