morning dove feather stems may be too thin to wrap
 
No more so than say, starling. I've used both and sometimes they break and sometimes they don't. If I break a couple in a row and it begins to effect my serenity (which it can and has...), I simply tie the feather in parallel with the hook shank and fold back and anchor in as many fiber as I need where I need them in order to make a collar. Does as adequate of a job as winding them given you don't want that many anyway...

Dove body feathers make great dun colored wings for dry flies, especially if you have wing burners. If not, you can shape them with nail clippers.

My edit, there are small feathers on the shoulders of the wings that serve the same purpose.
