Hatchery rainbow trout have been bred for all sorts of traits. A good read on the matter is "An Entirely Synthetic Fish" by Anders Halverson. BTW, one branch of Redband trout (whose McCloud strain is the basis for the first stocked bows), survive in the dry desert parts of Oregon and Nevada and have great heat resistance.
Seeforelen are European sea run brown trout. They have been stocked for a long time in large lake systems where they may be a good fit.
